Sondor's Hungarian Noodles and Cod

Ingredients:

  • 8 oz egg noodles
  • 2 cod fillets (about 6 oz each)
  • 3 tbsp unsalted butter
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp paprika (preferably Hungarian)
  • 1/2 cup sour cream
  • 2 tbsp fresh dill, chopped
  • 1 lemon, juiced
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions:

  1. Cook the egg noodles according to package instructions. Drain and set aside.
  2. In a large skillet, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium heat. Add the chopped onion and sauté until translucent.
  3. Add the minced garlic and paprika to the skillet, stirring for about 1 minute until fragrant.
  4. Push the onion mixture to the side of the skillet and add the cod fillets. Season with salt and pepper, and cook for about 3-4 minutes on each side until the fish is cooked through and flakes easily.
  5. Remove the cod from the skillet and set aside. In the same skillet, add the remaining butter and the cooked noodles, tossing to coat. Stir in the sour cream, lemon juice, and fresh dill until well combined.
  6. Plate the noodles and top with the cod fillets. Garnish with additional dill if desired, and serve immediately.
