Ingredients:

  • 4 slices sourdough bread
  • 4 strips of bacon
  • 1/2 cup garlic herb goat cheese
  • 1 cup diced tomatoes
  • 2 tablespoons pesto
  • 1 tablespoon balsamic glaze
  • Salt and pepper to taste
  • Fresh basil leaves (for garnish)

Instructions:

  1. Preheat a skillet over medium heat. Cook the bacon strips until crispy, about 5-7 minutes. Remove and drain on paper towels.
  2. While the bacon is cooking, toast the sourdough bread slices until golden brown in a toaster or on a grill.
  3. Spread a generous layer of garlic herb goat cheese on each slice of toasted sourdough.
  4. Layer the crispy bacon on two of the slices, followed by the diced tomatoes. Season with salt and pepper.
  5. Drizzle pesto over the tomatoes and top with the remaining slices of bread (goat cheese side down).
  6. Cut the sandwiches in half, drizzle with balsamic glaze, and garnish with fresh basil leaves before serving.
