Ingredients:

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup sweetened shredded coconut
  • 1 cup chopped pecans
  • 1 cup evaporated milk
  • 1 cup granulated sugar (for frosting)
  • 3/4 cup unsalted butter
  • 4 large egg yolks
  • 1 teaspoon vanilla extract (for frosting)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour four 9-inch round cake pans.
  2. In a large mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix well.
  3. Add eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Beat on medium speed for 2 minutes until smooth.
  4. Stir in the boiling water (batter will be thin) and mix until well combined.
  5. Pour the batter evenly into the prepared cake pans and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  6. While the cakes are baking, prepare the frosting. In a saucepan, combine evaporated milk, sugar, butter, and egg yolks. Cook over medium heat, stirring constantly until the mixture thickens (about 10-12 minutes). Remove from heat and stir in vanilla extract, coconut, and pecans. Let it cool.
  7. Once the cakes are baked, allow them to cool in the pans for 10 minutes before transferring them to wire racks to cool completely.
  8. Once the cakes are completely cool, layer them with the coconut-pecan frosting between each layer. Spread the remaining frosting on top and around the sides of the cake.
  9. Decorate with additional coconut and pecans if desired.
