Ingredients:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1/4 cup unsalted butter, chilled and cubed
  • 3/4 cup buttermilk
  • 1 pound breakfast sausage
  • 1/4 cup all-purpose flour (for gravy)
  • 2 cups whole milk
  • 1 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon dried sage
  • Salt to taste

Instructions:

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, mix together the flour, baking powder, baking soda, and salt.
  3. Cut in the chilled butter until the mixture resembles coarse crumbs.
  4. Stir in the buttermilk until just combined. Do not overmix.
  5. Turn the dough onto a lightly floured surface and gently knead it a few times. Pat it into a 1-inch thick round and cut out biscuits with a biscuit cutter.
  6. Place the biscuits on a baking sheet and bake for 12-15 minutes, or until golden brown.
  7. While the biscuits are baking, prepare the gravy. In a large skillet over medium heat, cook the breakfast sausage until browned and cooked through.

  9. Gradually whisk in the milk, stirring constantly until the gravy thickens, about 5-7 minutes.
  10. Season the gravy with black pepper, smoked paprika, dried sage, and salt to taste.
