Ingredients:

  • 4 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup unsalted butter, chilled and cubed
  • 1 1/2 cups buttermilk
  • 2 tablespoons honey
  • 1/2 cup unsalted butter, softened (for honey butter)
  • 2 tablespoons honey (for honey butter)

Instructions:

  1. Preheat the oven to 450°F (232°C).
  2. In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. Add the chilled, cubed butter to the flour mixture. Use a pastry cutter or your fingers to work the butter into the flour until it resembles coarse crumbs.
  4. Make a well in the center and pour in the buttermilk. Stir gently until just combined; do not overmix.
  5. Turn the dough onto a floured surface and knead gently just until it comes together. Pat the dough into a rectangle about 1-inch thick.
