Ingredients:

  • 2 cups fresh corn kernels (or frozen, thawed)
  • 1 cup buttermilk
  • 1 cup cornmeal
  • 1/2 cup all-purpose flour (gluten-free if desired)
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Vegetable oil for frying
  • Fresh parsley for garnish

Instructions:

  1. In a bowl, soak the corn kernels in buttermilk for at least 30 minutes to tenderize and add flavor.
  2. In another bowl, combine cornmeal, flour, smoked paprika, garlic powder, onion powder, salt, and pepper.
  3. Heat vegetable oil in a deep skillet over medium heat until hot.
  4. Remove the corn from the buttermilk and let excess drip off. Dredge the corn kernels in the cornmeal mixture until well coated.
  5. Carefully drop the coated corn kernels into the hot oil, frying in batches to avoid overcrowding. Fry until golden brown and crisp, about 3-4 minutes.
