Ingredients:

  • 4 chicken thighs, skin-on
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper
  • Vegetable oil for frying
  • 1/4 cup honey
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar

Instructions:

  1. In a bowl, combine the buttermilk, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper. Add the chicken thighs and marinate for at least 1 hour, preferably overnight in the refrigerator.
  2. In a separate bowl, place the flour. Remove each chicken thigh from the marinade, allowing excess to drip off, and dredge in the flour, pressing lightly to adhere.
  3. Heat vegetable oil in a deep skillet over medium-high heat until hot (about 350°F or 175°C). Carefully add chicken thighs to the oil, skin-side down, and fry for about 7-10 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F or 75°C).
  4. While the chicken is frying, in a small saucepan, combine honey, Dijon mustard, and apple cider vinegar. Heat over low heat until warmed through and well combined.
  5. Once the chicken is cooked, remove from the oil and place on a paper towel-lined plate to drain excess oil. Brush the honey-mustard glaze over the chicken before serving.
