Ingredients:

  • 1 lb ground bison
  • 1 cup kidney beans, canned and rinsed
  • 1 cup navy beans, canned and rinsed
  • 1 cup sweet potatoes, diced
  • 1 cup bell peppers, chopped (red, yellow, and green)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh cilantro for garnish

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and garlic, and sauté until the onion is translucent.
  2. Add the ground bison to the pot and cook until browned, breaking it up with a spoon as it cooks.
  3. Stir in the sweet potatoes, bell peppers, kidney beans, and navy beans.
  4. Pour in the vegetable broth and add the chili powder, cumin, salt, and pepper. Bring the soup to a boil.
  5. Reduce the heat and let it simmer for about 30 minutes, or until the sweet potatoes are tender.
  6. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh cilantro.
