Soya Chunk Rice with Spiced Potatoes and Tomatoes

Ingredients:

  • 1 cup rice
  • 1 cup soya chunks
  • 2 tablespoons ghee
  • 1 medium onion, finely chopped
  • 1 medium potato, diced
  • 1 medium tomato, chopped
  • 2 cups water
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • Salt to taste
  • Fresh cilantro for garnish

Instructions:

  1. Soak the soya chunks in hot water for 15 minutes, then drain and squeeze out excess water.
  2. In a large pot, heat the ghee over medium heat. Add cumin seeds and allow them to splutter.
  3. Add the chopped onion and sauté until golden brown.
  4. Stir in the diced potato and cook for 5 minutes until slightly tender.
  5. Add the chopped tomato, turmeric powder, coriander powder, and salt. Cook until the tomatoes soften.
  6. Add the soaked soya chunks and stir well to combine all the ingredients.
  7. Add the rice and water, bring to a boil, then reduce heat to low and cover the pot.
  8. Cook for about 15-20 minutes or until the rice is fully cooked and the water is absorbed.
  9. Fluff the rice with a fork and garnish with fresh cilantro before serving.
