Ingredients:

  • 400 g spaghetti
  • 6 cloves garlic, thinly sliced
  • 1/2 cup extra virgin olive oil
  • 1 tsp red pepper flakes
  • 300 g cherry tomatoes, halved
  • Salt, to taste
  • Freshly cracked black pepper, to taste
  • 1/4 cup fresh parsley, chopped
  • Grated Parmesan cheese, for serving (optional)

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. On a baking sheet, toss the halved cherry tomatoes with a drizzle of olive oil and a pinch of salt. Roast for about 20-25 minutes until they are soft and caramelized.
  3. While the tomatoes are roasting, cook the spaghetti according to package instructions in a large pot of salted boiling water until al dente. Reserve 1 cup of pasta water, then drain the spaghetti.
  4. In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and red pepper flakes, cooking until the garlic is golden and fragrant, about 2-3 minutes. Be careful not to burn the garlic.
  5. Add the drained spaghetti to the skillet, tossing to coat in the garlic oil. If the pasta seems dry, add a little reserved pasta water until you reach the desired consistency.
  6. Fold in the roasted cherry tomatoes and chopped parsley. Season with salt and freshly cracked black pepper to taste.
  7. Serve immediately, topped with grated Parmesan cheese if desired.
