Ingredients:

  • 100g lean ground beef
  • 100g spaghetti
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 1 garlic clove, minced
  • 1 medium carrot, diced
  • 1 celery stalk, diced
  • 200g canned diced tomatoes
  • 1 tbsp tomato paste
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • 50g mixed salad greens
  • 5 cherry tomatoes, halved
  • 1/4 cucumber, sliced
  • 1 tbsp balsamic vinegar
  • 1 tbsp olive oil (for dressing)

Instructions:

  1. Cook the spaghetti according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat 1 tbsp of olive oil over medium heat. Add the chopped onion, garlic, carrot, and celery. Sauté until the vegetables are softened, about 5 minutes.
  3. Add the lean ground beef to the skillet, breaking it apart with a spoon. Cook until browned.
  4. Stir in the canned diced tomatoes, tomato paste, oregano, basil, salt, and pepper. Simmer for 15-20 minutes, allowing the flavors to meld.
  5. While the sauce is simmering, prepare the side salad by mixing the salad greens, cherry tomatoes, and cucumber in a bowl.
  6. In a small bowl, whisk together the balsamic vinegar and 1 tbsp olive oil. Drizzle over the salad and toss to combine.
  7. Serve the spaghetti topped with the Bolognese sauce alongside the fresh side salad.
