Ingredients:

  • 300g lean ground beef
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 carrot, finely diced
  • 1 celery stalk, finely diced
  • 400g canned diced tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 300g spaghetti
  • 2 tablespoons olive oil
  • Mixed salad greens
  • 1 cucumber, sliced
  • 1 bell pepper, chopped
  • Cherry tomatoes, halved
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions:

  1. In a large skillet, heat olive oil over medium heat. Add the chopped onion, garlic, carrot, and celery; sauté until softened, about 5 minutes.
  2. Add the lean ground beef to the skillet, breaking it up with a spoon. Cook until browned, about 5-7 minutes.
  3. Stir in the canned tomatoes, tomato paste, oregano, basil, salt, and pepper. Bring to a simmer and cook for 20 minutes, stirring occasionally.
  4. While the sauce simmers, cook the spaghetti according to package instructions until al dente. Drain and set aside.
  5. For the side salad, combine mixed greens, cucumber, bell pepper, and cherry tomatoes in a bowl.
  6. In a small bowl, whisk together balsamic vinegar, Dijon mustard, honey, salt, and pepper. Drizzle over the salad and toss to combine.
  7. Serve the Bolognese sauce over the spaghetti with the side salad on the side.
