Ingredients:

  • 8 oz spaghetti
  • 2 chicken breasts, diced
  • 1 large sweet potato, peeled and cubed
  • 2 cups cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 1 onion, diced
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish (optional)

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, toss the cubed sweet potatoes with 1 tablespoon of olive oil, salt, and pepper. Spread them on a baking sheet and roast for about 25-30 minutes, or until tender and slightly caramelized.
  3. While the sweet potatoes are roasting, cook the spaghetti according to package instructions until al dente. Drain and set aside.
  4. In a large skillet, heat the remaining tablespoon of olive oil over medium heat. Add the diced onion and garlic, sautéing until translucent.
  5. Add the diced chicken to the skillet, seasoning with salt, pepper, oregano, and basil. Cook until the chicken is browned and cooked through, about 5-7 minutes.
  6. Stir in the halved cherry tomatoes and cook for another 5 minutes until the tomatoes begin to soften.
  7. Add the roasted sweet potatoes and cooked spaghetti to the skillet, tossing everything together to combine. Adjust seasoning if needed.
  8. Serve hot, garnished with fresh basil leaves if desired.
