Ingredients:

  • 12 oz spaghetti
  • 2 cups cherry tomatoes, halved
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 8 oz burrata cheese
  • 1/4 cup fresh basil leaves, chopped
  • Balsamic glaze, for drizzling
  • 1 teaspoon red pepper flakes (optional)

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. On a baking sheet, toss the halved cherry tomatoes with olive oil, salt, and pepper. Roast in the oven for about 20-25 minutes, until they are caramelized and bursting with flavor.
  3. While the tomatoes are roasting, cook the spaghetti according to package instructions in salted boiling water until al dente. Reserve 1/2 cup of pasta water before draining.
  4. In a large bowl, combine the cooked spaghetti with the roasted tomatoes and mix well. If the pasta seems dry, add reserved pasta water a little at a time until you reach the desired consistency.
  5. Gently tear the burrata cheese into pieces and add it to the spaghetti mixture. Toss lightly to combine.
  6. Serve the spaghetti topped with fresh basil, a sprinkle of red pepper flakes if desired, and a generous drizzle of balsamic glaze.
