Ingredients:

  • 1 pound boneless chicken thighs
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • 1 lime, juiced
  • 4 large flour tortillas
  • 1 cup cooked rice
  • 1 cup black beans, drained and rinsed
  • 1 cup diced tomatoes
  • 1 avocado, sliced
  • 1/2 cup shredded cheese (cheddar or Mexican blend)
  • Fresh cilantro for garnish

Instructions:

  1. In a bowl, mix olive oil, cumin, smoked paprika, garlic powder, onion powder, chili powder, salt, pepper, and lime juice to create a marinade.
  2. Add chicken thighs to the marinade, coating them well. Let them marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
  3. Preheat a grill or skillet over medium-high heat. Cook the marinated chicken thighs for about 6-7 minutes on each side, or until cooked through and juices run clear. Remove from heat and let rest before slicing.
  4. In a large tortilla, layer a scoop of cooked rice, black beans, diced tomatoes, sliced avocado, and shredded cheese.
  5. Add sliced chicken on top of the fillings, then roll the tortilla tightly to enclose the ingredients.
  6. Repeat with remaining tortillas and fillings. If desired, grill the burritos for 2-3 minutes on each side for added crispiness.
  7. Serve warm, garnished with fresh cilantro.
