Spiced Chickpea and Mango Salad

Ingredients:

  • 1 can chickpeas, drained and rinsed
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon garam masala
  • 1 tablespoon olive oil
  • Salt to taste
  • 1 ripe mango, diced
  • 1/2 red onion, finely chopped
  • 1 cup cucumber, diced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup plain yogurt
  • 1 tablespoon lime juice
  • 1 teaspoon honey (optional)
  • Black pepper to taste

Instructions:

  1. In a pan, heat the olive oil over medium heat. Add cumin seeds and toast until fragrant.
  2. Add the drained chickpeas, coriander powder, turmeric powder, garam masala, and salt. Cook for 5-7 minutes, stirring occasionally until the chickpeas are heated through and slightly crispy.
  3. In a large bowl, combine the diced mango, cucumber, red onion, and cilantro.
  4. In a small bowl, whisk together the yogurt, lime juice, honey (if using), and black pepper to create the dressing.
  5. Once the chickpeas are done cooking, let them cool slightly before adding to the salad bowl.
  6. Drizzle the yogurt dressing over the salad and toss gently to combine. Adjust seasoning as needed.
  7. Serve chilled or at room temperature.
