Ingredients:

  • 1 cup chickpea flour (besan)
  • 1 cup fresh spinach, chopped
  • 1 medium onion, finely sliced
  • 1-2 green chilies, finely chopped
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • Salt to taste
  • Water as needed
  • Oil for frying

Instructions:

  1. In a mixing bowl, combine the chickpea flour, cumin seeds, coriander powder, turmeric powder, red chili powder, and salt.
  2. Add the chopped spinach, sliced onions, and green chilies to the flour mixture.
  3. Gradually add water to the mixture, stirring until a thick batter forms that can hold the ingredients together without being too runny.
  4. Heat oil in a deep pan over medium heat.
  5. Once the oil is hot, carefully drop spoonfuls of the batter into the oil, ensuring not to overcrowd the pan.
  6. Fry the pakoras until they are golden brown and crispy, about 4-5 minutes, flipping them occasionally for even cooking.
  7. Remove the pakoras from the oil and drain on paper towels to remove excess oil.
  8. Serve hot with mint chutney or tamarind sauce.
