Ingredients:

  • 3 large eggs
  • 1 small onion, finely chopped
  • 1 small tomato, finely chopped
  • 1 green chili, finely chopped (optional)
  • 1/4 cup fresh cilantro, chopped
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon garam masala
  • Salt to taste
  • Pepper to taste
  • 1 avocado, mashed
  • 2 slices whole-grain bread
  • 1 teaspoon lime juice
  • Olive oil for cooking

Instructions:

  1. In a bowl, whisk together the eggs, onion, tomato, green chili, cilantro, turmeric, garam masala, salt, and pepper until well combined.
  2. Heat a non-stick skillet over medium heat and add a little olive oil.
  3. Pour the egg mixture into the skillet and cook for about 2-3 minutes, until the edges start to set.
  4. Gently lift the edges with a spatula, allowing the uncooked egg to flow to the edges. Cook until the omelette is fully set and slightly golden on the bottom.
  5. While the omelette is cooking, toast the whole-grain bread until golden brown.
  6. In a small bowl, mix the mashed avocado with lime juice, salt, and pepper to taste.
  7. Once the omelette is done, carefully slide it onto a plate. Serve alongside the avocado toast, topped with any remaining cilantro or additional lime wedges if desired.
