Ingredients:

  • 2 medium sweet potatoes, peeled and diced
  • 2 large carrots, peeled and sliced
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • 4 merguez sausages, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon smoked paprika
  • 1 cup fresh sprouts
  • 1 cup lettuce leaves, torn

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the diced sweet potatoes, sliced carrots, and onion.
  3. Add the minced garlic, olive oil, salt, and smoked paprika. Toss until the vegetables are well coated.
  4. Spread the vegetable mixture evenly on a baking sheet and roast in the oven for 20 minutes.
  5. After 20 minutes, add the sliced merguez sausage to the baking sheet and stir to combine with the vegetables.
  6. Return to the oven and roast for an additional 15-20 minutes, or until the vegetables are tender and the sausage is cooked through.
  7. Remove from the oven and let cool slightly before serving.
  8. Serve the roasted merguez and vegetable mixture over a bed of fresh lettuce and top with sprouts for a refreshing crunch.
