Ingredients:

  • 4 medium potatoes, diced
  • 4 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 teaspoon oregano
  • 1 teaspoon chili flakes
  • 1 cup curd (yogurt)
  • 1 tablespoon vinegar
  • 1 teaspoon mixed herbs
  • Salt to taste
  • Pepper to taste
  • 2 tablespoons olive oil

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the diced potatoes, minced garlic, grated ginger, oregano, chili flakes, olive oil, salt, and pepper. Toss until the potatoes are well coated.
  3. Spread the potato mixture on a baking sheet in a single layer and bake for about 30-35 minutes, or until the potatoes are golden and crispy, stirring halfway through.
  4. While the potatoes are baking, prepare the dressing by mixing the curd, vinegar, and mixed herbs in a small bowl. Season with salt and pepper to taste.
  5. Once the potatoes are done, remove them from the oven and let them cool slightly.
  6. Serve the roasted potatoes drizzled with the curd dressing and garnish with additional herbs if desired.
