Ingredients:

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 teaspoon cumin seeds
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 bell pepper, diced
  • 1 cup green peas (fresh or frozen)
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • Salt to taste
  • Fresh cilantro, chopped (for garnish)

Instructions:

  1. In a medium saucepan, combine the rinsed quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is fluffy and water is absorbed.
  2. In a large skillet, heat the olive oil over medium heat. Add cumin seeds and sauté until they start to sizzle.
  3. Add the chopped onion and garlic, sautéing until the onion is translucent.
  4. Stir in the diced carrot and bell pepper, cooking for about 5 minutes until they begin to soften.
  5. Add the green peas, turmeric powder, garam masala, and salt. Mix well and cook for another 3-4 minutes.
  6. Fluff the cooked quinoa with a fork and add it to the skillet with the vegetables. Stir to combine and heat through.
  7. Garnish with fresh cilantro before serving.
