Ingredients:

  • 2 medium sweet potatoes, peeled and diced
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 tablespoons olive oil
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • Pepper to taste
  • 1/2 cup plain yogurt (dairy-free if needed)
  • 1 tablespoon tamarind chutney
  • 1 tablespoon fresh cilantro, chopped
  • 1 tablespoon fresh mint, chopped
  • Chaat masala for garnish
  • Lemon wedges for serving

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the sweet potatoes with olive oil, cumin, coriander, garam masala, turmeric, salt, and pepper until evenly coated.
  3. Spread the seasoned sweet potatoes on a baking sheet in a single layer. Roast in the oven for 25-30 minutes, or until tender and slightly caramelized, flipping halfway through.
  4. While the sweet potatoes are roasting, prepare the chickpeas. In a skillet over medium heat, add the chickpeas with a drizzle of olive oil and season with cumin, coriander, garam masala, and salt. Sauté for about 5-7 minutes until heated through and slightly crispy.
  5. In a small bowl, mix the yogurt with tamarind chutney and a pinch of salt to taste. Adjust the tanginess based on your preference.
  6. Once the sweet potatoes are done, allow them to cool slightly. On a serving platter, layer the roasted sweet potatoes and spiced chickpeas together.
  7. Drizzle the yogurt sauce over the top and garnish with chopped cilantro, mint, and a sprinkle of chaat masala.
  8. Serve warm with lemon wedges on the side.
