Ingredients:

  • 1 lb ground beef
  • 1 green onion, chopped
  • 1 jalapeno, diced (adjust for spice preference)
  • 1 white onion, chopped
  • 1 bell pepper, chopped
  • 2 tomatoes, diced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions:

  1. In a large skillet, heat olive oil over medium-high heat.
  2. Add the chopped white onion and bell pepper, and sauté until they begin to soften, about 5 minutes.
  3. Stir in the diced jalapeno and cook for another 2 minutes.
  4. Add the ground beef to the skillet, breaking it up with a spatula. Cook until browned and cooked through, about 7-10 minutes.
  5. Stir in the diced tomatoes, garlic powder, cumin, salt, and pepper. Cook for an additional 5 minutes until the tomatoes are soft.
  6. Remove from heat and stir in the chopped green onion.
  7. Serve hot, garnished with fresh cilantro if desired.
