Ingredients:

  • 1 can black beans, drained and rinsed
  • 2 medium sweet potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 8 corn tortillas
  • 1/2 cup Greek yogurt
  • 1 tablespoon lime juice
  • 1/4 cup fresh cilantro, chopped

Instructions:

  1. Preheat the oven to 425°F (220°C).
  2. In a bowl, toss the diced sweet potatoes with olive oil, chili powder, cumin, salt, and pepper.
