Ingredients:

  • 1 cup rice
  • 1 can black beans, drained and rinsed
  • 1 cup diced green chiles
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions:

  1. In a medium saucepan, cook the rice according to package instructions. Set aside once done.
  2. In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  3. Add minced garlic and sauté for another minute until fragrant.
  4. Stir in the tomato paste, diced green chiles, cumin, and paprika. Cook for 2-3 minutes, allowing the flavors to meld.
  5. Add the black beans to the skillet and stir to combine. Season with salt and pepper to taste. Allow to heat through for about 5 minutes.
