Ingredients:

  • 1 lb ground chicken
  • 2 tablespoons soy sauce (gluten-free if needed)
  • 1 tablespoon hoisin sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon fresh ginger, minced
  • 2 cloves garlic, minced
  • 1 cup bell peppers, diced
  • 1 cup water chestnuts, chopped
  • 1/2 cup green onions, sliced
  • 1 tablespoon sriracha (adjust to taste)
  • 1 head of butter lettuce or romaine, leaves separated
  • Sesame seeds for garnish

Instructions:

  1. In a large skillet, heat sesame oil over medium heat. Add minced garlic and ginger, sautéing until fragrant.
  2. Add ground chicken to the skillet, cooking until browned and cooked through, breaking it apart as it cooks.
  3. Stir in soy sauce, hoisin sauce, and sriracha, mixing well.
  4. Add diced bell peppers and chopped water chestnuts, cooking for an additional 2-3 minutes until vegetables are tender.
  5. Remove from heat and stir in sliced green onions.
  6. To serve, spoon the chicken mixture into lettuce leaves, and sprinkle with sesame seeds.
