Ingredients:

  • 8 oz egg noodles or rice noodles
  • 1 lb boneless, skinless chicken breast, sliced
  • 2 tablespoons vegetable oil
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 1 carrot, julienned
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 3 tablespoons soy sauce
  • 2 tablespoons chili paste or sauce (adjust to taste)
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 2 green onions, chopped
  • Salt and pepper to taste
  • Sesame seeds for garnish

Instructions:

  1. Cook the noodles according to package instructions. Drain and set aside.
  2. In a large skillet or wok, heat the vegetable oil over medium-high heat.
  3. Add the sliced chicken and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes.
  4. Add garlic, ginger, red bell pepper, broccoli, and carrot to the skillet. Stir-fry for another 3-4 minutes until the vegetables are tender-crisp.
  5. In a small bowl, mix together soy sauce, chili paste, honey, and sesame oil.
  6. Add the cooked noodles and sauce to the skillet, tossing everything together until well combined and heated through, about 2 minutes.
  7. Garnish with chopped green onions and sesame seeds before serving.
