Ingredients:

  • 1 lb boneless, skinless chicken thighs
  • 2 tablespoons chipotle in adobo sauce, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 8 small corn tortillas
  • 1 ripe mango, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • Juice of 1 lime
  • 1/4 cup fresh cilantro, chopped
  • 2 cups shredded lettuce
  • 1/2 cup crumbled queso fresco

Instructions:

  1. In a bowl, mix together the chipotle in adobo sauce, cumin, paprika, salt, and pepper. Add the chicken thighs and marinate for at least 30 minutes.
  2. Heat olive oil in a skillet over medium-high heat. Add the marinated chicken and cook for about 5-7 minutes per side, or until fully cooked and slightly charred. Remove from heat and let rest before slicing.
  3. In another bowl, combine diced mango, red onion, jalapeño, lime juice, and cilantro. Mix gently to create the mango salsa.
  4. Warm the corn tortillas in a dry skillet or microwave until pliable.
  5. To assemble the tacos, place a few slices of chicken on each tortilla, top with shredded lettuce, mango salsa, and crumbled queso fresco.
  6. Serve immediately with lime wedges on the side.
