Ingredients:

  • 3 lbs chuck roast
  • 2 tablespoons olive oil
  • 1 large onion, sliced
  • 4-5 dried red chilis, stems removed
  • 4 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 2 cups beef broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions:

  1. Preheat your oven to 300°F (150°C).
  2. In a large Dutch oven, heat olive oil over medium-high heat. Season the chuck roast with salt and pepper, then sear it on all sides until browned. Remove the roast and set aside.
  3. In the same pot, add the sliced onions and cook until they are caramelized, about 10 minutes.
  4. Add the minced garlic, ground cumin, smoked paprika, and dried red chilis to the onions. Stir and cook for an additional 2 minutes until fragrant.
  5. Return the roast to the pot and pour in the beef broth. Bring to a simmer.
  6. Cover the pot with a lid and transfer it to the preheated oven. Cook for about 3-4 hours, or until the meat is tender and easily shreds with a fork.
  7. Once cooked, remove the roast from the oven and let it rest for 10 minutes before slicing. Serve garnished with fresh cilantro if desired.
