Ingredients:

  • 400g frozen meatballs
  • 250g pasta (spaghetti or penne)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 medium onion, chopped
  • 1 inch ginger, grated
  • 1 teaspoon chili flakes (adjust to taste)
  • 1 can (400g) tinned tomatoes
  • 1 cup vegetable stock
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish (optional)

Instructions:

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.
  4. Add the frozen meatballs to the skillet, cooking until they are browned on all sides, about 5-7 minutes.
  5. Sprinkle in the chili flakes and stir well, then pour in the tinned tomatoes and vegetable stock.
  6. Bring the mixture to a simmer, allowing it to cook for about 10-15 minutes until the meatballs are heated through and the sauce thickens slightly.
  7. Season with salt and pepper to taste. If desired, add the cooked pasta to the skillet and toss to combine.
  8. Serve hot, garnished with fresh basil or parsley if desired.
