Ingredients:

  • 1 sheet of puff pastry, thawed
  • 2 large onions, thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon red pepper flakes
  • 1 cup goat cheese, crumbled
  • 1/4 cup spicy honey
  • 1 tablespoon fresh thyme leaves
  • 1 egg, beaten (for egg wash)

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet, heat olive oil over medium heat. Add the sliced onions, salt, and pepper. Cook, stirring occasionally, until the onions are caramelized and golden brown, about 20-25 minutes.
  3. Stir in the red pepper flakes and fresh thyme, and cook for an additional 2 minutes. Remove from heat and let cool slightly.
  4. Roll out the puff pastry on a lightly floured surface to about 1/8 inch thick. Cut into 4-6 squares or circles, depending on your preferred tart shape.
  5. Place the pastry squares on a baking sheet lined with parchment paper. Use a fork to prick holes in the center of each pastry, leaving a 1-inch border around the edges.
  6. Spread the caramelized onion mixture evenly over the center of each tart, leaving the border clear.
  7. Sprinkle the crumbled goat cheese over the onion mixture.
  8. Brush the edges of the pastry with the beaten egg to give a golden finish.
  9. Bake in the preheated oven for 15-20 minutes, or until the pastry is golden brown and puffed.
  10. Remove from the oven and drizzle the spicy honey over each tart before serving. Enjoy warm!
