Ingredients:

  • 4 chicken thighs, bone-in and skin-on
  • 2 tablespoons hot honey
  • 3 tablespoons soy sauce
  • 1 cup broccoli florets
  • 1 cup bok choy, chopped
  • 1 capsicum (bell pepper), sliced
  • 1 onion, sliced
  • 1 medium kumara (sweet potato), cubed
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix the hot honey and soy sauce to create a marinade. Add salt and pepper to taste.
  3. Place the chicken thighs in a baking dish and pour half of the marinade over them, ensuring they are well coated. Let them marinate for at least 15 minutes.
  4. While the chicken is marinating, toss the cubed kumara with olive oil, salt, and pepper on a baking tray. Roast in the preheated oven for about 20 minutes or until tender.
  5. After the kumara has been roasting for 20 minutes, add the broccoli, bok choy, capsicum, and onion around the chicken in the baking dish.
  6. Drizzle the remaining marinade over the vegetables and roast everything together for an additional 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
  7. Serve hot, garnished with sesame seeds or green onions if desired.
