Ingredients:

  • 12 oz penne pasta
  • 1 lb spicy Italian sausage, casings removed
  • 2 tablespoons olive oil
  • 1 medium onion, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes, with juices
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh basil, for garnish
  • Grated Parmesan cheese, for serving

Instructions:

  1. Cook the penne pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced onion and cook until translucent, about 5 minutes.
  3. Add the spicy Italian sausage to the skillet, breaking it apart with a spoon. Cook until browned and cooked through, about 7-10 minutes.
