Ingredients:

  • 2 medium potatoes, peeled and diced
  • 1 large onion, chopped
  • 4 large eggs
  • 1 teaspoon peri peri mix
  • 1 teaspoon garlic mix
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 4 slices of bread, toasted
  • Fresh herbs for garnish (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add the diced potatoes and cook until they are golden and tender, about 10-12 minutes.
  3. Add the chopped onion to the skillet and sauté until translucent and slightly caramelized, about 5-7 minutes.
  4. Stir in the peri peri mix and garlic mix, cooking for an additional 2 minutes until fragrant. Season with salt and pepper to taste.
  5. Transfer the potato and onion mixture to a greased baking dish. Make four wells in the mixture and crack an egg into each well.
  6. Bake in the preheated oven for about 15-20 minutes, or until the egg whites are set but the yolks are still runny.
  7. While the eggs are baking, toast the slices of bread.
  8. Serve the spicy potato and onion egg bake hot, garnished with fresh herbs if desired, alongside the toasted bread.
