Ingredients:

  • 2 medium potatoes, peeled and diced
  • 1 large onion, thinly sliced
  • 4 large eggs
  • 1 tablespoon peri peri mix
  • 1 teaspoon garlic mix
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large oven-safe skillet, heat the olive oil over medium heat. Add the diced potatoes and cook until they are golden and tender, about 10-12 minutes.
  3. Add the sliced onion to the skillet and sauté for another 5-7 minutes until the onions are soft and translucent.
