Ingredients:

  • 4 large eggs
  • 1 tablespoon olive oil
  • 1 small red chilli, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons fresh coriander, chopped
  • 2 tablespoons pecorino cheese, grated
  • 1 tablespoon capers, rinsed and chopped
  • Salt and pepper to taste

Instructions:

  1. In a bowl, whisk together the eggs, salt, and pepper until well combined.
  2. Heat olive oil in a non-stick skillet over medium heat. Add the minced garlic and chopped chilli, sautéing for about 1 minute until fragrant.
  3. Pour the whisked eggs into the skillet. Using a spatula, gently stir the eggs as they begin to set, cooking for about 3-4 minutes until soft and creamy.
  4. Remove from heat and fold in the chopped coriander, grated pecorino, and capers.
  5. Serve immediately with additional coriander and a sprinkle of pecorino on top.
