  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 1 cup shredded smoky mozzarella cheese
  • 1/2 cup chopped fresh parsley
  • 1 tablespoon lemon juice

Instructions:

  1. Cook the fettuccine pasta according to package instructions until al dente. Drain and set aside.

  3. Reduce the heat to low and pour in the heavy cream. Stir to combine, then gradually add the Parmesan cheese, stirring until melted and the sauce is creamy.
  4. Add the cooked fettuccine to the skillet and toss to coat in the sauce. Stir in the shredded smoky mozzarella cheese until melted.
  5. Finish with chopped parsley and a squeeze of lemon juice for brightness. Serve hot.
