Ingredients:

  • 3 large eggs
  • 1 can of spicy tuna (in olive oil or water, drained)
  • 2 tablespoons mayonnaise
  • 1 tablespoon sriracha sauce (adjust to taste)
  • 1 small green onion, finely chopped
  • 1/4 cup bell pepper, diced (red or green)
  • 1 tablespoon fresh cilantro, chopped
  • Salt and pepper, to taste
  • 1 tablespoon olive oil or butter

Instructions:

  1. In a bowl, whisk together the eggs, salt, and pepper until well combined.
  2. In another bowl, mix the drained spicy tuna, mayonnaise, sriracha, green onion, bell pepper, and cilantro until evenly distributed.
  3. Heat olive oil or butter in a non-stick skillet over medium heat.
  4. Pour the egg mixture into the skillet, tilting to spread evenly. Cook until the edges start to set.
  5. Add the tuna mixture to one half of the omelette, then fold the other half over it.
  6. Continue cooking for another 2-3 minutes until the eggs are fully set and the omelette is golden brown.
  7. Carefully slide the omelette onto a plate, slice in half, and serve warm.
