Ingredients:

  • 3 large eggs
  • 1 can of tuna in olive oil, drained
  • 1 small onion, finely chopped
  • 1 small bell pepper, diced
  • 1-2 green chilies, finely chopped (adjust for spice level)
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 tablespoon feta cheese, crumbled (optional)

Instructions:

  1. In a bowl, whisk the eggs with salt and pepper until well combined.
  2. Heat olive oil in a non-stick skillet over medium heat. Add the chopped onion and bell pepper, sautéing until softened.
  3. Stir in the chopped green chilies and drained tuna, cooking for another 2-3 minutes until heated through.
  4. Pour the beaten eggs over the tuna mixture, tilting the pan to ensure even coverage.
  5. Cook for about 3-4 minutes, gently lifting the edges of the omelette to allow uncooked eggs to flow underneath.
  6. Sprinkle the chopped parsley and feta cheese (if using) on top.
