Ingredients:

  • 2 tuna fillets
  • 2 packs of ramen noodles
  • 1 cup corn kernels (fresh or canned)
  • 3 tablespoons soy sauce
  • 1/4 cup chopped cilantro
  • 1/4 red onion, thinly sliced
  • 1/4 white onion, thinly sliced
  • 1/2 bell pepper, thinly sliced
  • 1/4 cup spicy mayonnaise
  • 2 cups water
  • Salt and pepper to taste
  • 1 tablespoon vegetable oil

Instructions:

  1. In a medium pot, bring 2 cups of water to a boil. Add ramen noodles and cook according to package instructions. Drain and set aside.
  2. Season tuna fillets with salt and pepper. Heat vegetable oil in a skillet over medium-high heat. Sear tuna fillets for about 2-3 minutes on each side, or until cooked to your liking. Remove from skillet and let rest for a few minutes before slicing.
  3. In the same skillet, add the sliced red onion, white onion, and bell pepper. Sauté for about 3-4 minutes until softened.
  4. In a large bowl, combine the cooked ramen noodles, sautéed vegetables, corn kernels, and soy sauce. Toss to combine.
  5. To serve, divide the ramen mixture into bowls, top with sliced tuna, a drizzle of spicy mayonnaise, and garnish with chopped cilantro.
