Ingredients:

  • 1 lb ground turkey
  • 1 can black beans, drained and rinsed
  • 1 medium onion, diced
  • 1 bell pepper, diced (any color)
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • Juice of 1 lime
  • Fresh cilantro for garnish

Instructions:

  1. In a large skillet, heat olive oil over medium heat.
  2. Add diced onion and bell pepper, sautéing until softened, about 5 minutes.
  3. Stir in minced garlic, cumin, chili powder, smoked paprika, salt, and pepper, cooking for an additional minute until fragrant.
  4. Add ground turkey to the skillet, breaking it apart with a spatula. Cook until browned and cooked through, about 7-10 minutes.
  5. Stir in the black beans and cook until heated through, about 3-5 minutes.
  6. Remove from heat and stir in lime juice.
