Ingredients:

  • 1 pound ground beef
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 cups fresh spinach, chopped
  • 8 ounces pasta (your choice)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • Mixed salad greens (for serving)
  • Cherry tomatoes, halved (for salad)
  • Cucumber, sliced (for salad)
  • Olive oil and vinegar dressing (for salad)

Instructions:

  1. In a bowl, combine the ground beef, garlic powder, onion powder, salt, and pepper. Form into patties.
  2. Heat a skillet over medium heat and cook the beef patties for about 5-7 minutes on each side, or until cooked through. Remove from skillet and set aside.
  3. In the same skillet, add olive oil and minced garlic. Sauté for 1-2 minutes until fragrant.
  4. Add the chopped spinach to the skillet and cook until wilted. Set aside.
  5. Meanwhile, cook pasta according to package instructions. Drain and return to pot.
  6. Toss the cooked pasta with the sautéed spinach and garlic mixture. Add lemon juice and mix well.
  7. To serve, place a generous portion of the spinach pasta in a bowl, top with a beef patty, and serve with a side of mixed salad greens topped with cherry tomatoes and cucumber, drizzled with olive oil and vinegar dressing.
