Ingredients:

  • 4 large bell peppers (any color)
  • 1 pound ground beef
  • 1 medium onion, diced
  • 2 cups frozen spinach, thawed and drained
  • 1 cup cooked rice (white or brown)
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional, for topping)
  • Olive oil for sautéing

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds. Lightly brush the outside with olive oil and place them upright in a baking dish.
  3. In a large skillet, heat a tablespoon of olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  4. Add the ground beef to the skillet and cook until browned. Drain excess fat if necessary.
  5. Stir in the thawed spinach, cooked rice, diced tomatoes, garlic powder, paprika, salt, and pepper. Mix well until combined and heated through.
  6. Spoon the beef and spinach mixture into each bell pepper, packing it in gently.
  7. If using, sprinkle shredded cheese on top of each stuffed pepper.
  8. Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the cheese is bubbly.
  9. Serve warm, garnished with fresh herbs if desired.
