Spinach and Cottage Cheese Baked Eggs

Ingredients:

  • 4 large eggs
  • 1 cup fresh spinach, chopped
  • 1 cup cottage cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 teaspoon nutmeg
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • Fresh parsley, for garnish

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Season with salt, pepper, and nutmeg.
  4. In a mixing bowl, combine the cottage cheese and half of the mozzarella cheese. Stir in the cooked spinach mixture until well combined.
  5. Grease a baking dish with olive oil. Spoon the spinach and cottage cheese mixture into the dish, creating small wells for the eggs.
  6. Crack an egg into each well and sprinkle the remaining mozzarella cheese on top.
  7. Bake in the preheated oven for 15-20 minutes, or until the eggs are set to your liking.
  8. Remove from the oven and let cool slightly. Garnish with fresh parsley before serving.
