Ingredients:

  • 6 large eggs
  • 1 cup fresh spinach, chopped
  • 1 cup mushrooms, sliced (preferably cremini or button)
  • 1/2 cup goat cheese, crumbled
  • 1/4 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs (such as parsley or chives) for garnish

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a large oven-safe skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sauté until translucent.
  3. Add the sliced mushrooms to the skillet and cook until they are golden brown, about 5-7 minutes.
