Ingredients:

  • 4 medium-sized russet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Skewers (wooden or metal)
  • 1/2 cup mayonnaise
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • Pinch of cayenne pepper (optional)

Instructions:

  1. Preheat your oven to 425°F (220°C).
  2. Wash and peel the potatoes. Using a spiralizer or a knife, cut the potatoes into spiral shapes, creating long strands.
  3. Soak the potato spirals in cold water for about 30 minutes to remove excess starch, then drain and pat dry.
  4. Thread the spiraled potatoes onto skewers, making sure to leave some space between each spiral.
  5. In a bowl, mix olive oil, paprika, garlic powder, onion powder, salt, and pepper. Brush this mixture over the potato skewers.
  6. Place the skewers on a baking sheet lined with parchment paper and bake for 25-30 minutes, or until golden brown and crispy, flipping halfway through.
  7. While the potatoes are baking, prepare the spicy garlic aioli by mixing mayonnaise, minced garlic, lemon juice, Dijon mustard, and cayenne pepper in a small bowl.
  8. Once the potatoes are done, remove them from the oven and serve hot with the spicy garlic aioli on the side.
