Ingredients:

  • 1 lb stew meat (beef)
  • 1 cup rice (white or brown)
  • 2 bell peppers (red and green), sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 tablespoons olive oil
  • 2 eggs
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions:

  1. In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
  2. Add the stew meat to the pot, browning on all sides. Season with salt, pepper, and smoked paprika.
  3. Pour in the beef broth and bring to a boil. Reduce the heat and let it simmer for about 1.5 hours or until the meat is tender.
  4. In the last 20 minutes of cooking, add the sliced bell peppers to the pot.
  5. While the stew is simmering, cook the rice according to package instructions.
  6. In a separate pan, fry the eggs sunny-side up or to your liking.
