Ingredients:

  • 1 medium bitter melon, sliced
  • 200g pork tenderloin, thinly sliced
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste
  • 1 teaspoon fresh ginger, minced
  • 1 red bell pepper, sliced (for color and sweetness)
  • 1 green onion, chopped (for garnish)

Instructions:

  1. Heat the vegetable oil in a large skillet over medium-high heat.
  2. Add the minced garlic and ginger, sautéing for about 30 seconds until fragrant.
  3. Add the sliced pork tenderloin to the skillet, cooking until browned and cooked through, about 4-5 minutes.
  4. Stir in the sliced bitter melon and red bell pepper, cooking for an additional 3-4 minutes until the vegetables are tender yet crisp.
  5. Pour in the soy sauce and oyster sauce, stirring to coat the ingredients evenly. Cook for another minute.
  6. Drizzle with sesame oil and season with salt and pepper to taste.
  7. Remove from heat and garnish with chopped green onion before serving.
