Ingredients:

  • 2 medium bitter melons, sliced thinly
  • 4 large eggs
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 tablespoon soy sauce
  • Salt and pepper to taste
  • 1 green onion, chopped (for garnish)

Instructions:

  1. Heat the vegetable oil in a large skillet over medium heat.
  2. Add the minced garlic and sauté until fragrant, about 30 seconds.
  3. Add the sliced bitter melon and stir-fry for about 5-7 minutes, or until slightly softened.
