Ingredients:

  • 8 small corn tortillas
  • 1 can black beans, drained and rinsed
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon chipotle powder
  • 1 avocado, diced
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1/2 cup sour cream
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • Lime wedges for serving

Instructions:

  1. In a skillet, heat olive oil over medium heat. Add black beans, smoked paprika, chipotle powder, salt, and pepper. Cook for about 5 minutes until heated through.
  2. While beans are cooking, warm the corn tortillas in a separate skillet or directly over a flame until pliable.
  3. In a small bowl, mix sour cream with lime juice, and season with salt to taste to create a lime crema.
  4. To assemble the tacos, place a generous spoonful of the black bean mixture on each tortilla.
  5. Top with diced avocado, shredded lettuce, diced tomatoes, red onion, and cilantro.
  6. Drizzle with lime crema and serve with lime wedges on the side.
